THE FOLLOWING CLASSES MAY BE SCHEDULED AS PRIVATE GROUP LESSONS, UNTIL FURTHER NOTICE.  MINIMUM OF 4 STUDENTS REQUIRED TO BOOK YOUR DATE.

Introduction to Whole Grain Breads-

~This class will teach you how to make really good, really healthy whole grain bread that your family will LOVE, as well as provide you with gobs of information on flour types and variations, sources, baking techniques, and so much more!  Hand-outs and recipes will be provided, but plan to take notes as well (if desired)!

~Whole grain bread baking demonstration will include:  Mixing, kneading, forming, and baking 100% whole wheat sandwich bread (my own award-winning recipe) and a basic whole grain recipe that is so versatile for many different uses (pizza dough, French bread, focaccia, pita, baguette, breadsticks, and more!).

~Lots of samples!  Once the pizza dough has risen, we will top it and bake a fabulous whole grain pizza as part of a delicious lunch, and also taste the numerous other creations as well, pairing them with local olive oil, homemade jams and other handmade condiments.
~This class is perfect for post-holiday health-minded diets, as well as for individuals who want to maintain their healthy lifestyle.  Whole grains are vitamin rich, packed with nutrients, and keep you full much longer than refined breads (and you'll generally eat less, feeling full much sooner than you would with white bread).

~Drawing for extra breads.  You might get to take home a loaf of freshly baked whole grain bread!

~Come with an appetite!  In addition to bread samples, the following will be served as  Farm To Table style lunch (most of my ingredients are local and organic):  Whole Grain Gourmet Pizza with homemade, homecanned tomato sauce (from homegrown tomatoes), mozzarella cheese, and various delicious toppings (can be made vegetarian); Mixed Baby Greens Salad with Blood Oranges, Spiced Pepitas, Goat Cheese, and Homemade Passion Fruit-Blood Orange Vinaigrette; Seasonal Citrus Fruit Salad; Iced Tea; Organic Strawberry Lemonade; and something sweet for dessert.

~Geared toward adult women, but ambitious guys and mature teens are welcome also.  Class size limited to 6.

~Class should take about 3 hours, but plan for 4 just in case.  10 AM-1 PM.

~Class fee:  $45

GLUTEN FREE Cupcakes-

~Even if you're not following a gluten free diet, this is a fun class to attend to learn about cake baking and decorating!

~This sweet class will teach you the basics of baking gluten free cupcakes, and discuss the differences in gluten free flour types.  We'll also talk about how to convert your favorite wheat-based cake recipes to gluten free.

~You will watch a cupcake baking demonstration, focusing on how gluten free cake batter should look after mixing.

~You will learn how to make the complicated Italian Meringue Buttercream icing.  (Even if you're not GF, this icing is a great one to learn about!!)  I will show you various piping techniques and give suggestions on how to frost your cupcakes.  American Buttercream will be available for sampling and decorating as well.

~Each participant will decorate, and take home, 6 cupcakes.  Various sprinkles will be supplied for embellishments.

~This class is recommended for adults and kids (ages 12 and up).  Children 8-11 years old are welcome with a parent, as a "Mom and Me" experience.  Class size limited to 8.

~A drawing will be held if there are any extra cupcakes available at the end of class (or we might vote to munch on them...).

~Class will last approximately 2 1/2 hours, starting promptly at 1 pm.

~Class fee:  $25

Whole Grain Breads II-

~This class is a follow-up to the Introduction to Whole Grain Breads.  We will skip over the basics discussed in the first class and jump right into more advanced techniques!  I highly recommend attending the first bread class before taking this one, as it's helpful to have an understanding about how yeast works and the different types of flour available.

~You will learn how to give your breads more flavor with preferments (results are like sourdough, but without the babysitting of starter).

~Breads demonstrated are:  Baguettes (my extra special ones), Focaccia, and Bagels, all whole grain!!

~Samples will be plentiful, with homemade complimentary condiments (including homemade cream cheese!).  Beverages will be provided, as well as nutritious munchies to round out the light lunch.

~Drawing for extra breads.
